To Print The Recipe go to: www.recipelion.com cooking tips and tutorials go to www.RecipeLion.com Follow me on Facebook: www.facebook.com Follow me on Twitter: twitter.com 1 ciabatta bun 1 small eggplant 1 red bell pepper, deseeded and sliced to 4 1 tablespoon Chevron Goat Cheese 1 tablespoon pesto 3 tablespoons extra virgin olive oil salt and pepper to taste Cut the eggplant lengthwise to 1/2in slices. Salt the slices heavily on both sides and let them stand for 10 minutes. Then wash the salt under running water. Brush the peppers and eggplants with olive oil, salt and pepper and grill them on high heat until cooked thru. Place the peppers in airtight container and let them cool. When cool peel the skin of the pepper. Cut the bun to 2 cover one side with goat cheese and the other with pesto. Then place the eggplant and pepper on top. Close the sandwich and enjoy!
