I am sure that you are familiar with avocado toast. It has made its way around the blogging circles and into our national lexicon. You can order avocado toast not only at fancy brunch spots but also at many local coffee places. When did avocado become a standard part of breakfast? When people realized how creamy, delicious, and healthy avocado is.
Why Avocado is so Awesome
Avocado is full of unsaturated fats (the healthy kind!) and packed with fiber. According to MedicalNewsToday, "Avocados are a great source of vitamins C, E, K, and B-6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium. They also provide lutein, beta-carotene, and omega-3 fatty acids." Aside from being healthy, avocados are so yummy to eat! All that healthy fat makes it taste almost sinful to eat. Avocado toast is super easy for the morning or a snack. Just mash with a few extra ingredients, slather on some toast, and enjoy!
Don't forget the toppings
This is the base you need for any delicious avocado toast. The lemon adds some brightness and the salt and pepper make the flavors really shine. You can eat it just like this, or feel free to great creative! Some of our favorite toppings:
A soft-boiled egg, for extra protein and that yummy runny center
Red pepper flakes for a kick
Nuts or seeds for a bit of crunch
Lobster for over-the-top amazingness
Notes for the Perfect Toast
As with most simple recipes, the deliciousness is in the ingredients. High-quality, nutritious bread (like whole-wheat, whole-grain, or Ezekiel), plus the perfectly ripe avocado, makes for an awesome breakfast. You can tell if your avocado is ripe if it yields to gentle pressure (meaning, it is a little soft when you press it gently). Another way to check is to take off the stem. If the flesh inside that stem hole looks green, you should be good to go. Use both of these methods together to find the perfect fruit!

Ingredients
2 slices whole wheat (or Ezekiel) toast
1 ripe avocado
1 teaspoon lemon juice
salt and pepper to taste (we recommend 1/4 of each)
Optional: 1/2 tsp olive oil mixed in or drizzled on top
Optional toppings, like soft-boiled egg, seeds, red pepper flakes, etc
Directions
Toast the 2 pieces of bread.
Mash avocado with a fork in a bowl.
Add in lemon juice, salt, pepper, and optional olive oil (you can mix the olive oil in or drizzle it on top).
Spread the avocado mixture on the bread. Top with optional toppings and enjoy!
