This Beet Goat Cheese Salad Recipe

Looking for a fresh, delicious lunch or light dinner option; look no further than this Beet Goat Cheese Salad! With a zippy homemade salad dressing, plenty of healthy fats from the cheese and walnuts, and tons of fiber from the lettuce and beets, this salad is a real winner.

Making this salad couldn't be easier. Simply layer the salad and ingredients into bowls. Whisk together the citrus dressing in a small bowl. Top the salad with the dressing. Amazing! See the notes below for how to cook fresh beets (two ways). Or, feel free to do what we often do and buy a precooked container of beets. Make sure to rinse any canned goods well.

This recipe makes 2 to 3 servings. It all depends on how much salad you want to eat! Alternatively, you could make small portions and eat as a side salad or a pre-dinner salad course.

How to Cook Fresh Beets

If you have never cooked fresh beets before, there are a few different ways that you can tackle this.
  1. Roast them. Preheat the oven to 400 degrees F. Cut fresh beets in half and lay them on a baking sheet, lined with aluminum foil. Roast for about an hour, or until you can easily cut through the middle part of the beet. Allow to cool completely and then peel and slice. Beets are very messy and can turn everything they touch pink! To slice, use gloves or forks to avoid turning your hands pink!
  2. Boil them. Boil a large pot of water over medium heat. Pop in the beets and cook in boiling water for about 40 minutes. Drain the water. Allow the beets to cool. Then peel and slice.   3. Alternatively, you can use a can, bag, or jar of pre-cooked beets. Make sure that there's no added sugar. We also always recommend rinsing any canned foods to rinse off any excess salt. This is the route we often go!

Ingredients

  • 3 cups leafy greens like romaine or arugula
  • 4 large beets (or 1 can of pre-cooked beets)
  • 5 clementine oranges
  • 1⁄2 cup walnuts
  • 1 1⁄2 cups goat or feta cheese
  • FOR THE DRESSING:
  • 1/4 cup olive oil
  • 2 TBS orange juice
  • 1/4 TBS Dijon mustard
  • salt and pepper to taste (we recommend 1/8 tsp of each)

Directions

  1. (To use fresh beets, either roast them for one hour at 400 degrees, or boil them for about 40 minutes in a large pot of boil water. For both methods, let them cool and then slice. See notes for more.)
  2. Section out the clementines. Crumble the goat or feta cheese.
  3. Make the salad dressing by whisking together the olive oil, orange juice, mustard, honey, salt and pepper.
  4. Add salad greens in bowls. Top with beets, oranges, walnuts and cheese. Drizzle with dressing. Enjoy immediately!
