There are many slow cooker recipes out there that use packaged products to make your cooking experience easier. These are convenient. Unfortunately, many contain artificial flavors, colors, and chemicals. You would do better to avoid these. Many cans of cream of mushroom soup, for example, have soybean/ canola oil and soy protein isolate, among other less desirable items. Packages of Crock-Pot Savory Herb Chicken Seasoning start with modified corn starch as ingredient number one. These products work in a pinch. Ingredients
4 medium boneless skinless chicken breasts (about 2 pounds)
1 medium onion, chopped
1 cup artichoke hearts, chopped
1 cup chopped roasted red peppers, chopped
2 TBS capers
3 tsp dried Italian seasoning
2 TBS lemon juice
1 tsp minced garlic
salt and pepper to taste
Optional: lemon wedges, for plating
Directions
Gather all your ingredients. Pat the chicken dry and then season with salt and pepper. Chop all your veggies. Make your dressing by mixing together the Italian seasoning, lemon juice, and garlic.
Optional step: Heat a pan on the stove over medium-high. Add a bit of oil and then sear the chicken for a few minutes on each side. You want the chicken to just brown on the outside, not cook in the middle. (This step is optional. It will help the chicken will stay together, rather than fall apart like slow-cooked chicken.)
Pop the chicken in the crockpot and add the chopped onions, artichoke, peppers, and capers. Pour on the lemon-garlic dressing that you made earlier.
Cover the crockpot and cook on low for 4 hours
make sure the chicken is cooked all the way through (larger chicken breasts, or not searing the outside ahead of time, may require additional cook time).
Eat hot and served with a wedge of lemon and some green veggies on the side.
