Everyday Roasted Green Beans
Delicious as a side dish, snack, or hors d’oeuvre, these green beans won’t last long in your house. Take the humble green bean to new heights of deliciousness by roasting it and adding a touch of lemon at the end! Roasted green beans are easy enough for weekday meals, but yummy enough for company. Ingredients
- 1 pound fresh green beans, trimmed
- 1/2 TBS olive oil or more, as necessary
- 1 TBS lemon juice
- salt and pepper to taste (recommended: 1/4 tsp of each)
- optional: crushed walnuts for serving
Directions
- Preheat oven to 400 F.
- Trim the ends off the green beans, if needed.
- Toss in a bowl with olive oil, salt and pepper. Spread onto a baking sheet, with minimal overlapping (so that all the beans cook evenly).
- Roast at 400 for about 20 minutes, until the beans are slightly shriveled and have brown areas. Remove pan from oven.
- Sprinkle the lemon juice all over the beans. Using a spatula, quickly toss the beans to coat with the lemon juice and turn them over to ensure even roasting.
- Pop back in the oven for 2 to 3 minutes.
- Take out of oven and transfer to a plate. If desired, top with crushed walnuts for serving. Yum!
