Chocolate Chip Banana Muffins (with invisible lentils!)

Protein and fiber with great, whole-food ingredients! 

These sweet, hearty muffins are perfect for breakfast with your morning coffee. My kids love them as an afternoon snack. You will love that all those healthy, whole-food ingredients give you the taste of muffins with none of the sugar crash afterwards. The fiber and protein from the lentils and whole wheat flour will help keep your blood sugar stable. 

Here's what you will need: 

Wet Ingredients 
1 cup cooked lentils (we like canned for convenience; rinse them very well!)
1/4 cup avocado oil 
2 bananas 
1/2 cup sugar (could use less! We recommend at least 1/4 cup. Coconut sugar or white sugar are both fine.)
1 tsp vanilla 
1 egg
Dry Ingredients
2/3 cup oats (If you like a smoother muffin, blend in the food processor prior to mixing with the other dry ingredients)
2/3 cup wheat flour 
1/2 cup chocolate chips (could use less. We recommend at least 1/4 cup) 
1/4 cup flax seed
1 tsp cinnamon
1 tsp baking soda
With just 20 minutes of prep time and 20 minutes of cook time, you will have an amazingly delicious baked treat!
