Are chickpeas good for you?

Chickpeas are a staple of the Mediterranean table, and they're a genuine nutritional workhorse. They're rich in plant protein and fiber, the pairing that makes beans and legumes such a regular part of this way of eating, and the kind of fiber linked to steadier blood sugar and heart health. That's what gives these roasted chickpeas real staying power as a snack, something you can't say for most crunchy things from a bag. They're also cheap, shelf-stable, and endlessly flexible, which is exactly why they're worth keeping in the pantry.

A few tips

Dry them well. This is the whole secret. Pat the chickpeas completely dry after rinsing, or they'll steam instead of crisp.

Don't add the spices too early. Roast them with just oil and salt, then toss with spices like smoked paprika or cumin right out of the oven so they don't burn.

Eat them fresh. They're crispiest the day they're made. If they soften, a few minutes back in a hot oven revives them.

Ways to serve and use them

These are made for snacking by the handful, but they're just as useful scattered over other food. Use them in place of croutons on a salad, spoon them onto a grain bowl or a bowl of soup for crunch, or set them out with olives and hummus as part of a simple Mediterranean snack spread.

Change the spice blend to match whatever you're serving them with: smoky paprika and cumin for a savory snack, or cinnamon and a touch of honey for a sweeter version that's great over yogurt.

Frequently asked questions

Won't they burn if they are at 400 for 30 minutes? Here’s why they don’t burn: chickpeas are starchy, not sugary, so they brown slowly and evenly into a golden, nutty crisp rather than scorching the way something with honey or sugar would. Keeping them in a single layer and shaking the pan halfway spreads the heat so nothing sits in a hot spot too long.

That said, ovens genuinely vary, and some run 15 to 25 degrees hot. So treat the time as a range, not a rule. Start checking around 22 to 25 minutes. You want deep golden and you want them to sound light and rattly when you shake the pan. If yours looks like it’s browning fast, pull it then. If you’d rather play it safe, drop to 375F and just give it a few extra minutes.

How long do they keep? A couple of days in a loosely covered container. Sealing them tight traps steam and makes them soft.

What seasonings work? Smoked paprika, cumin, garlic powder, or a little chili. For a sweet version, cinnamon and a touch of honey.

Are they good on salads? Very. They make a great crunchy topping in place of croutons.
