Spicy Cauliflower

This Spicy Cauliflower Dish

Salty, spicy, crunchy…. I sometimes make this dish multiple times in the same week; I love it so much.

My husband says this cauliflower reminds him of a spicy dirty martini. You know, just without the alcohol, plus adding in cauliflower of course.

Cauliflower is part of the cruciferous vegetable family, and that means, it’s really good for you! Cauliflower is high in fiber and low in calories, so it is great for weight loss, digestion, and feeling full. It provides antioxidants and phytonutrients that may help lower inflammation in your body and protect against cancer.

It also contains plenty of vitamin B, choline, folate, and vitamin C, among many other important nutrients. Do your health and your waist a favor and give this dish a try!

Enjoy it alongside a main meal or as a snack. You could even stir in lentils or beans and eat a larger helping as a main meal.

If you are following a low sodium diet, you can consider reducing or leaving out the olives, as they tend to be pretty high in salt. Cauliflower roasted with pepper and olives makes for a spicy, salty side!

Ingredients

  • 1 head of cauliflower, chopped into small pieces (about 6- 8 cups)
  • 1 cup green olives, chopped in small pieces
  • 6 cloves garlic
  • 2 TBS olive oil
  • 1/2 tsp crushed red pepper (or more, if you like it really spicy!)
  • 1/4 tsp salt

Directions

  1. Preheat oven to 400 degrees F.
  2. Chop cauliflower and olives. The smaller you chop your olives, the more flavor you will get in each bite.
  3. In a big bowl, mix together all the ingredients. Lay them out onto a baking sheet.
  4. Roast in the preheated oven for about 20 minutes. We love the cauliflower really roasted-- but you can shorten the cooking time if you like less brown tips on the veggies. Flip the veggies halfway through.
  5. Serve and enjoy!
